Portobello Mushrooms
While on the subject of mushrooms, I am definitely a self-confessed carnivore and if I leave this world a little early because of it...so be it!
If I had to become a vegetarian, it wouldn't be fun, but I know what I would eat at just about every meal...Portobello mushrooms either grilled or smoked. I view them like a pizza. Choose your favorite topping: diced peppers, diced onions, cheese,... whatever. Just use your imagination and your taste buds to create the perfect Portobello concoction.
Here is a simple marinade for you to get started:
1/3 cup soy sauce
1/2 cup olive oil
2 Tablespoons of minced garlic
Allow to marinate 3-4 hours or longer.
Put the mushroom/s on your grill and add all toppings to the mushroom/s reserving your cheese for the last 20 minutes of the cooking process. Using the indirect method, smoke for approximately 1 to 1 1/2 hours. Use low heat @ 220 - 240*. Add the cheese in the last 20 minutes of the cook cycle.
